Vegan

Kale Protein Salad and Lemon Tahini Dressing

Peel and dice 2 medium sweet potatoes. Season with olive oil, salt, and pepper. Bake at 350, flipping once, until soft.

Place chopped kale in a bowl, seasoning with olive oil, lemon, and salt.

Make the dressing using a half a cup of tahini, juice of one lemon, and salt to taste. Add water to desired thickness.

Add remaining ingredients to the kale of sweet potatoes, cooked garbanzo beans (drained and rinsed), diced avocado, dried cranberries, chopped almonds, and a diced red onion.

Seafood

Smoked Salmon Pasta Salad

Cook bowtie (farfalle) pasta and drain.

Place in a bowl, coat with olive oil and chill.

Place cucumber slices around the edge of the pasta.

Cover the pasta with sliced smoked salmon, sliced fresh tomato, and diced green peppers.

Add shredded Monterey Jack and blue cheese dressing.

Salt and pepper to taste.

Chicken

Grilled Wonton Chicken Salad

Make the dressing in the blender using green onions, salt, pepper, olive oil and rice vinegar. Chill.

Marinate covered chicken in teriyaki sauce for one hour in the refrigerator. Place them on the grill until done. Cut into strips.

Place wonton strips into a warm oiled skillet over a medium-high heat. Cook and drain on paper towels.

In a large bowl, toss together greens, water chestnuts, almond pieces, mandarin orange slices, diced apples, and sesame seeds. Top with grilled chicken and wonton strips. Add dressing.
