Fresh and Healthy Buddha Bowl with Tahini Dressing Drizzle

When creating a buddha bowl you want to incorporate delicious and vitamin packed spinach with protein rich garbanzo beans (chick peas) and vegetables like cucumbers, red onion, and tomato, and some healthy barley grains. The perfect balance of good for you food with crunch and texture. A creamy tahini dressing is an easy and fresh topping to meld the flavors and enhance the entire experience. This easy recipe will leave you feeling full and satisfied while bringing your body the best of balance.

Prep Time: 10 minutes

Cook Time: prep barley before hand and refridgerate for use during the week
Total Time: About an hour with pre-prep and preparing vegetables
Serves: 2 to 4


1 bag fresh spinach
1 can garbanzo beans
1 cucumber
1 half red onion
1 tomato
2 cups of barley (cooked)

Tahini dressing:

1/4 cup tahini
1 tbsp soy sauce
1 shake of sesame oil
2 shavings of fresh ginger
1 clove garlic sliced thin
juice of 1/2 a lemon
fresh ground pepper
Use water to thin out dressing

(All of these ingredients can be prepared and bowls can be made individually prepared throughout the week)

Take cooked and cooled barley and put a scoop on bottom of bowl
Lay spinach, sliced cucumber, tomato chunks, to one side
Add rinsed and drained garbanzo beans
Mix all ingredients for dressing and lightly drizzle over buddha bowl.
