Gluten-Free & Vegan Coconut Pancakes

The All-American breakfast has long included beautiful, fluffy pancakes. Pancakes are a wonderful thing that make a delicious filling breakfast. The only problem is that pancakes can leave you feeling sluggish and heavy, and are not a friendly choice for those gluten-free or vegan. These vegan pancakes will provide you with great energy while remaining gluten-free. Vegan butter and honey make a great topping for these lightly sweet, coconut pancakes.
1/2 cup coconut flour
1/2 tablespoon flax meal
1 teaspoons baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 tablespoons honey or sugar
½ teaspoon vanilla
1/8 cup applesauce
½ cup coconut milk
¼ cup shredded coconut

1. Preheat a greased griddle. Sift dry ingredients together and set aside. Mix together wet ingredients.

2. Add the wet ingredients to dry ingredients while continuously stirring. Reserve about a ¼ cup of wet ingredients to ensure the mixture is not too runny. If still needed, add the rest of wet ingredients. Continue to stir only until the lumps are out. Fold in shredded coconut.

3. ¼ cup batter drops should result in about 4-5 pancakes. Let cook until first side starts to bubble around the edges, about 1-2 minutes and then flip. Continue cooking for another 1-2 minutes. Serve with shredded coconut sprinkled on top.
