Fig Salad with Honey Yogurt Dressing

Savor all of the sweetness with none of the guilt. The benefits of honey and yogurt might already be known to you. We all love honey’s antimicrobial powers and use as a perfect replacement for sugar. Not to mention how including Greek yogurt into your diet is an ideal source of protein and nutrients. Now the fig, a delicious fruit from the mulberry family, has a sweet honey-like taste which pairs perfectly with (you guessed it!) honey. Figs have been shown to help with weight loss and are full of omega-3 and omega-6 fatty acids to help keep your brain and body at peak performance. This fresh salad recipe features the greens of your choice (we recommend the classic pairing of spinach and arugula), tender figs, and a honey yogurt dressing your mouth won’t believe is actually good for you.

Serves 4

You Will Need:

8 fig halves
2 cups spinach
2 cups arugula
1/2 cup 0% plain Greek yogurt
4 tsp honey
2 Tbsp white balsamic vinegar
4 Tbsp pine nuts
Salt and Pepper to taste

Directions:

1. Place Greek yogurt, honey, white balsamic vinegar, salt, and pepper in one large bowl. Whisk until all ingredients are mixed together.
2. Put spinach and arugula on four separate plates and top each salad with two fig halves.
3. Drizzle honey yogurt dressing and top with pine nuts.
4. Enjoy!
